Have you browsed the frozen food section at Trader Joe’s? Well, I do (often), and I’ve found a handful of gems that I have bought on more than one occasion, such as Thai Joe’s Lemongrass Chicken Stix – described as ‘tantalizingly tasty, exotic, crispy & crunchy spring-roll wrappers filled with lemongrass-flavored chicken.’ One box contains 10 chicken stix, where two of the wrappers equal one serving. The primary ingredients used to make the filling of the chicken stix are chicken meat, cabbage, lemongrass, green onion, and ginger.
There are two ways to cook these spring roll snacks: 1) Bake on a cookie sheet in an oven at 450 degrees for about 10-12 minutes, and 2) Deep-fry for 3-4 minutes. I prefer to bake the rolls to cut down on added calories. Out of the oven, the roll is pleasingly crisp.
A strong lemony flavor is one of the first things detected when biting into one of the ‘chicken stix.’ Two stix equal 100 calories, and offer 5 grams of protein with a small amount of vitamin C (6% of your daily recommended value). I usually eat 4-5 in one sitting for a quick lunch. They are good on their own, but I imagine they’d be even better with a little duck or orange sauce.
